Potato Leek Soup
3 leeks
4 potatoes
1/4 sweet onion
4 cloves garlic roughly chopped
4 cups Chicken Broth
1/2 cup heavy cream
salt, pepper
curry, cayenne, basil, dill
Cook your potatoes in the chicken broth as if you’re making mashed potatoes
add your leeks, onion, and garlic about half way through.
Add 1/2 the amount of spices you will need. Use an immersion blender after the potatoes are soft.
Add the rest of the spices & taste as you go.
I topped with cheese, bacon bits, and green onions
