Potato Leek Soup

  • 3 leeks

  • 4 potatoes

  • 1/4 sweet onion

  • 4 cloves garlic roughly chopped

  • 4 cups Chicken Broth

  • 1/2 cup heavy cream

  • salt, pepper

  • curry, cayenne, basil, dill

  • Cook your potatoes in the chicken broth as if you’re making mashed potatoes

  • add your leeks, onion, and garlic about half way through.

  • Add 1/2 the amount of spices you will need. Use an immersion blender after the potatoes are soft.

  • Add the rest of the spices & taste as you go.

I topped with cheese, bacon bits, and green onions
