Oven- Roasted Chicken

Ingredients: 4-5 servings

~3-4 lb chicken, quarter the following: 1 lemon , 5 cloves garlic, 1/2 onion.
Thyme, pepper, salt, cast iron

How To:
Preheat your oven to 425. Pat your chicken dry & take the giblets out. Pat the inside dry as much as you can & add salt & pepper in there. Stuff about 1/2 of your quartered lemons, garlic, & onions, as well as 2-3 sprigs of thyme. Season the outside generously with salt, pepper & thyme (take it off the sprig).
Add the rest of your lemons, garlic, onions, & thyme sprigs around the chicken in your cast iron.
Place in oven for 15 minutes at 425 & then turn down to 385 & cook for another 45 minutes, checking every 20 or so.
This chicken was so tender!
