Zucchini Au Gratin

  • 8x8 dish

  • 1 cup heavy cream

  • shredded cheese!

  • 3/4 yellow zucchini sliced

  • 3/4 green zucchini sliced

  • 2 yukon gold potatoes sliced

  • 1/4 onion sliced

  • pepper, salt, fresh garlic, parsley, paprika, dill.

  • Cut your veggies & place your zucchini on a paper towel & sprinkle salt over them.

  • Let sit for about 10 minutes, flip & repeat. Pat dry.

  • Set your oven to 400.

  • Butter your dish, & layer your veggies.

  • Add 1/4 your cheese on top & mix your spices with the heavy cream.

  • Pour that over & add 1/2 of the cheese you have left.

  • Place tin foil over dish & in oven for approximately 30-45 minutes.

  • Sprinkle the rest of the cheese on top and place back in without the tin foil for about 10 minutes. Enjoy!!
