Jalepeno Beer Cheese

1/4 diced onion, 2 cloves garlic, 1/4 jalepeno sliced into short thin strips, mild cheddar cheese, butter, heavy cream, pepper, 1/4 cup beer.

Be ready to be constantly stirring. Start by sauteing 1/4 diced onion with a healthy slab of butter. Once the onions are beginning to brown, add another healthy slab of butter, and 2 cloves garlic roughly chopped. Let that simmer together for about 2 minutes on high heat, then lower it to medium and add your beer to create a glaze. Add some heavy cream and your cheese. As you are stirring, if it is too cheesy, add a dash more of heavy cream, if it’s too runny, add a small handful of cheese. Add your jalepenos in last and stir for approximately 2 minutes. You should get a nice cheesy consistency.

Suggestions of what to use it with:

Mac & Cheese
Dip (replace heavy cream with sour cream for thicker consistency)
Queso (add 1 more slab of butter & another small handful of cheese)
