Roasted Garlic Mashed Potatoes:

3 potatoes, 1 head of garlic, heavy cream, butter. Roast your garlic for 30 minutes on 350 in tin foil, make sure to add your olive oil. Boil water & peel potatoes. Chop roughly into bite sized pieces & place into water. Once you can easily pierce with a knife, strain the water. I’d recommend keeping a tablespoon or 2 of the starchy water to help everything stick together. Once drained, add heavy cream, butter, and salt slowly while mashing. Squeeze your roasted garlic during this process, as well. This will help the flavor get rich and allow you to taste as you go.

Air-fried Brussels Sprouts

Half lengthwise your brussels sprouts and let sit in a marinade made of balsamic glaze, olive oil, minced garlic, salt & pepper. Preheat your air-fryer (or oven) to 350. Add the brussels to the air-fryer for about 10-15 minutes. Flipping them half way will help them get an even crisp. Top with balsamic glaze.

Green Bean Casserole

Preheat oven to 350. Empty one can of cream of mushroom or chicken soup into an oven friendly container. Slowly mix with milk until you get a less thick, but still creamy texture. Mix in your green beans, canned or frozen. You will want to fill the rest of the container. Mix in crunchy fried onions and sliced almonds for some extra love. Place in oven for about 30 minutes. Top with crunchy fried onions & almonds.

Candied Carrots

Saute baby carrots, butter, and brown sugar in a pan. Cover to obtain main stickiness. I add thyme & a dash of pepper at the end for some extra flavor.

Butternut Squash Soup

Peel your butternut squash & dice it up. Toss it with olive oil in a big bowl with the spices listed under ingredients. Roast on 350 for about 45 minutes or until they are a little crispy. Carmelize your onions. Boil your chicken broth & add both onions & squash once it’s roasted, let come to a boil together. Blend together, add heavy cream & your spices. Let come to a simmer & add parmesan. A small squash would serve about 3 cups of soup, if you find a medium one, add another cup of broth & it’ll serve about 5.
