Chicken Tuscany

1 white onion, 1 tomato, 5 cloves garlic, 2 cups heavy cream, 1 handful mozzarella, salt, pepper, cayenne, oregano & fresh basil

Sauté & slightly caramelize your sliced onions on medium heat with butter. Once they start to get some color, start to add pinches of roughly chopped garlic as you cook. This will make the flavor strong! Once your onions begin to caramelize, start to rip some basil into pieces by hand to sauté with your onions/garlic mixture. Add spinach & 1/2 of your heavy cream. Stir & let simmer for about 5 minutes. Add some more basil, the rest of your garlic & heavy cream & continue stirring on low-medium heat. Add your tomatoes & cheese together as your mixture thickens.

Cook your chicken on medium high heat with the spices used in the sauce. I’d recommend using a lid to cover the pan so it can create moisture and become more tender. Place your chicken in the sauce to sit for about 2 minutes.
