Mango Curry
1 mango, 2 potatoes diced, 1/2 onion diced, 4 cloves garlic minced, 1/4 can chick peas, 1/4 cup frozen veggie of choice, 1/3 cup chicken broth.
spices: yellow curry, salt, pepper, cayenne, red pepper flakes, garlic & onion chives.
Cut your mango & purée it with an immersion blender or bullet! Add your potatoes & onion to a skillet & begin to sauté-I use a little chicken broth & olive oil. Add garlic once the onions become translucent and then begin seasoning to your liking. Add frozen veggie, puréed mango, & rest of chicken broth. I did a second round of seasoning after putting the mango in. Cover & simmer together until it turns into a thick texture. Serve with a grain of your choosing & enjoy!
