Preheat oven to 400, cut potato in half.
Add your spices & olive oil!
I used salt, pepper, curry powder, garlic powder, cayenne pepper & rubbed it around the top.
Cut a long X on your potato & throw it in the oven for about 15 minutes. Check the firmness with a fork after 15 minutes- (this will help tell you how much longer it needs)
If it’s still really firm, cut another line, add a dash of olive oil & pop it back in for about 10-15. It took about 20-25 minutes in total for this small-medium sized potato.
I enjoy everything savory, so I went with carmelized onions, frozen sautéed edamame in the same spices listed above, & fresh corn on the cob
