Creamy Parmesan Pasta
(1 pot recipe AND less than 15 minutes).
•1 cup pasta
•lots of shredded parm
•1 h e a l t h y scoop of ricotta cheese.
•1/2 cup frozen edamame (12 gr protein!).
•1 thicc slice of an onion, chopped
•2 cloves garlic, minced
•2 fresh basil sprigs
•salt, pepper, cayenne, parsley, thyme.
Cook your pasta and set aside 1/2 cup pasta water. This will help the cheese melt :) sauté your onion in some oil & add your edamame to thaw. Then add your garlic basil & seasoning & throw your pasta back in with the water you’ve saved. Add your ricotta first & mix, then you can add your parmesan.
Top with pepper & basil & *chefs kiss* a creamy dreamy pasta dish for 1.
